Ingredients
- 200 g whole wheat pasta
- 2 small zucchinis
- 4 small tomatoes
- 2 stalks of celery
- 2 spring onions
- 1 yellow pepper
- 2 onions
- 200 g feta
- 100 g black olives
- 6 tbsps extra virgin olive oil
- 2 tbsp wine vinegar
- salt
- pepper
Method
- Cook the pasta “al dente” according to the instructions on the packet, rinse, drain and allow to cool.
- Clean and wash the vegetables, slice the zucchinis, cut the tomatoes into eight slices, slice the celery, cut the spring onions crosswise and cut the peppers into thin strips. Peel the onions and cut them into rings.
- Dice the feta and drain the olives.
- Briefly sauté the zucchini slices in a pan in 2 tablespoons of olive oil, season with salt and pepper.
- Mix the pasta with the feta, olives, the fried zucchini slices and the remaining vegetables and arrange on the plates.
- Prepare a dressing with 4 tablespoons of olive oil and wine vinegar, season with salt and pepper and drizzle over the salad.
