Ingredients
- 2 tablespoons olive oil, divided
- 2 cups mushrooms, sliced
- 5 ounces fresh kale, stemmed and sliced into ribbons
- 1 avocado, sliced
- 4 large eggs
- Salt and pepper as needed
How to
- Take a large skillet and place it over medium heat
- Add a tablespoon olive oil
- Add mushrooms to pan and Saute for 3 minutes
- Take a medium bowl and massage kale with remaining 1 tablespoon olive oil (for about 1-2 minutes)
- Add kale to skillet and place them on top of mushrooms
- Place slices of avocado on top of kale
- Create 4 wells for eggs and crack each egg onto each hold
- Season eggs with salt and pepper
- Cover skillet and cook for 5 minutes
- Serve hot!
